5 Easy and Healthy Lunch Ideas

Do you ever skip lunch? We all know that this is a bad idea, (skipping any meal isn’t a great idea) but it’s a habit I have and one I have trouble breaking. I have also noticed girlfriends at work skipping lunch, or grabbing something for lunch that isn’t the healthiest choice. And I admit, I’ve been guilty of grabbing that yummy but not very healthy lunch myself when I haven’t brought a lunch from home.

So today I’ve some some easy and healthy lunch ideas for you to prepare so that you never have to skip lunch, or grab something on the go.

I’m the kind of cook that throws things together, so I don’t have actual recipes today, but I’ll give some instructions along with the ideas to help you out. So here we go!

1. Southwestern Omelette

Ingredients: two eggs, red bell pepper, baby spinach, onion and southwest spice mix (garlic powder, chili powder, cheyenne pepper, salt, pepper, oregano)

Saute veggies in a healthy oil, then add the beaten eggs to the pan. Cook until the bottom is stuck on, then flip the omelette over, or place in oven to avoid messing it all up. That’s my favourite trick, as I do tend to mess up omelettes all the time.

This is quick and easy whether you work from home or in some brick building–make fresh, or make and take and warm up in mirowave.

2. Black Bean Salad

This one couldn’t be easier. Open up a can of black beans, rinse, add some cherry tomatoes, chopped spring onions, sprinkle in some chopped herbs (your choice, I like mint and basil) add in olive oil, salt, pepper and chill for an hour. Then you have a delicious and filling lunch!

You can throw this together the night before and take to work, or throw together last minute if needed and chill at work.

2. Egg Salad Sandwich

All right, I know this old school, but eggs have healthy protein and are yummy. Here is how I mix together my egg salads.

Tip: De-shell eggs under cold water.

Chop eggs, add in a half mayo and half Miracle Whip (1/4 cup total for two eggs, or slightly less depending on preference) and add salt, pepper, dried tarragon and I like to add a dash of paprika. Mix in very finely chopped onion before serving. Serve on your bread of choice. Don’t like mayo? Try mixing the egg into some smashed avocado instead.

Note: I use the same dressing to make tuna salad.

Quick to prepare, this will take no time to together the night before, but you might be more rushed trying to toss this all together in the morning.

4. Caesar Salad and Smoked Salmon

This is another super easy one. All you need is romaine lettuce, Caesar salad dressing (store bought or home made) parmesan cheese (be sure to get the real deal in the deli section of your supermarket) and whatever else you like in your Ceasar salad. I personally skip crotons and bacon bits when I’m making this at home.

You can get smoked salmon in the frozen fish/meat section and once you open the package, just thaw, add about 3-4 slices to a side plate and enjoy.

This is also easy to make the night before and bring to work in containers.

5. Guacamole and Corn Chips

Yes, I am totally recommending this as a healthy lunch! Avocados are packed full of healthy fats, fiber, antioxidants and may even help prevent cancer. So why not indulge?

Ingredients: one avocado, one juiced lime, half a red onion-chopped (or less if you are not into onion too much) salsa (optional), cilantro-chopped. I like to chop all of this in a mini food processor with the lime juice and in one easy step you have delicious, home made guac!!

Serve with organic blue corn chips. Yum!

And those are my five easy and healthy lunch ideas! I tried to give you ideas that anyone could make, even if you don’t consider yourself a cook. I also wanted something that would be fairly easy to throw together last minute before work, though I do recommend you get your lunch prepped the night before for sanity’s sake.

    These all sound so healthy! I like the sound of salmon Caesar salad – I usually have it with chicken so it would be nice to try something a bit different!

    THeSe are wonderful easy to make lunch SUGGESTIONS. I PERSONALLY love and enjoy eGgs… omlette and egg salad. One of my FAVORITE lunches to eat is tuna fish made with VEGANAISE, onion and lemon with a small salad 🥗 🤗
